Egg noodles are made from flour, egg, and water. Any time flour and water mix, unless the mixture is quickly made into matzah in a controlled environment, the result will be chametz, food that is forbidden on Passover.

Thus, your typical egg noodles are not kosher for Passover.

That said, there are special runs of egg noodles that are certified kosher for Passover (and gluten free), which are sold around Passover time.
